Caribbean Céviche
Ingredients
1/2 cup DEVIL'S ORCHARD Pineapple vinegar
2 lb mixed seafood, uncooked (octopus, squid, shrimp, clams etc.)
1 cup fresh pineapple (or mango), diced
1/4 cup red bell pepper, diced
1/4 cup Bermuda onion, minced
1 Jalapeño pepper, thinly sliced
1 tsp fresh thyme, chopped
1/3 cup olive oil
kosher salt, to taste
Method
1. Place the thawed uncooked mixed seafood in a large mixing bowl.
2. Season with kosher salt and add vinegar. Mix well.
3. Once mixed, add the pineapple, red pepper, Bermuda onion, jalapeños and thyme.
4. Cover and refrigerate for about an hour. Gently mixing at 30 minutes. You want the seafood to firm up and looked cooked. Don’t over marinate though or the seafood will get mushy.
5. Remove from fridge, add olive oil and gently mix.
